Ingredients:

For Sambar:

  • ½ tsp turmeric powder
  • 1½ tbsp sambar powder

  • 2 tbsp chopped coriander leaves (for garnish)

For Tempering:

  • 2 tbsp oil or ghee
  • ½ tsp mustard seeds
  • 1 tsp cumin seeds
  • 1-2 dried red chilies
  • 10-12 curry leaves
  • A pinch of asafoetida (hing)

Step-by-Step Instructions:

1. Cook the Dal:

  • Rinse toor dal thoroughly and pressure cook it with 3 cups of water and turmeric powder for 3-4 whistles (or until soft).
  • Mash the dal and keep it aside.

2. Prepare the Tamarind Extract:

  • Soak tamarind in ½ cup of warm water for 10 minutes.
  • Squeeze out the pulp and discard the fibers. Keep the tamarind extract aside.

3. Cook the Vegetables:

  • In a pan, heat 1 tsp oil, add onions and tomatoes, and sauté for 2 minutes.
  • Add chopped vegetables and cook until they soften.

4. Add the Masala:

  • Pour the tamarind extract into the pan, add sambar powder, salt, and jaggery, and let it simmer for 5-7 minutes.
  • Add the mashed toor dal and mix well.
  • Add water if the sambar is too thick, and simmer for another 5 minutes.

5. Tempering for Flavor:

  • Heat oil or ghee in a small pan.
  • Add mustard seeds, let them splutter, then add cumin seeds, red chilies, curry leaves, and a pinch of asafoetida.
  • Pour the tempering over the sambar and mix well.

  • Sprinkle chopped coriander leaves and serve hot with steamed rice, idli, dosa, or vada.
